Garlic paste

Ginger paste



Cumin powder

Kashmiri red chilli powder

Poppy seed

Nutmeg powder

Garam Masala powder

Tomato puree or sauce

Whole cardamom

Whole cloves

Whole cinamon sticks

Bay leaves


Alubukhara: 5-6p (optional)




Salt and sugar to taste.


Take about 500gms of chicken (Boneless/with bones). Mix about 2 tsp of salt and a lemon juice. Keep it to marinate for about 20 mins.

Make about 150 gms of onion paste and slice 2-3 medium sized onion. Make a thick ginger-garlic paste (15 gms).


Heat about 2tbs of oil (white oil) ina deep frying pan or a wok. Fry the chicken till its golden brown in colour. Then, take the chicken out and in the same oil, fry the sliced onions till it turns dark brown in colour. While the onion turns dark brown in colour, mix 100 gms of curd, ginger-garlic paste, 2 tsp of Kashmiri red chilli powder, 2 tsp of turmeric powder, 1 tsp of cumin powder, nutmeg powder, Fennel powder, respectively. Then, mix the onion paste and about 10 gms of poppy seed paste into it. Now, whisk all the ingredients well. By the time, if the onion gets fried till golden brown, add the mixed ingredients into it and stir it well. Keep it covered and allow it to cook over medium flame for about 10 mins. Now, add about 2 tsp fo garam masala powder, salt to taste and a small amount of sugar. Now add the tomato puree (50 gms).  Again mix the ingredients well, and keep covered to cook for another 3-4 mins. Now, add the chicken and let it cook, till the chicken seems tender and well, cooked. You should avoid adding extra water. After the chicken is well-cooked. Add about 10 gms of ghee and Aloo Bukhara (optional). Mix well, and keep it over low flame for another 2-3 mins before taking it off the flame and serving it.
