Take about 200 gms of Pasta (Penne). Boil it for about 5 mins. Also, cut the chicken breast (boneless)-100 gms and boil it. Chop the vegetables (Capsicum). Finely chop garlic (10 gms).
Boil about 100 gms of tomatoes. Peel off the skin and smash to make a paste of it. Thinly slice 1 or 2 tomatoes and keep it aside.
Take the chopped vegetables in a baking tray. Add pepper, oregano, basil (2tbs) each. Mix the tomato paste, 20 gms of cream. Put the boiled pasta, chicken and mix it well. Add salt to taste.
Now, place the sliced tomatoes over the pasta mix and sprinkle about 2-3 ml of olive oil.
Cover it with a layer of grated cheese (flavor of your choice).
Sprinkle salt and pepper. Sprinkle some more oregano and basil.
Bake it at 180°C for about 25 mins.
Serve it by sprinkling some fresh virgin olive oil.
